I would look for a tee that fits between the valve and the existing copper pipe, and has a branch for you to attach a John Guest fitting for your RODI.

I think the valve and copper pipe will be a 3/8" compression fitting.  But you need to check that.  It's not the same as 3/8 NPT.

Your local HD/Lowes might not carry it.

If that valve is quite old and you plan to turn it on and off more frequently due to the RODI, you might want to replace it with a quarter-turn ball valve.  The packing seal in the oval handle valves tend to wear out over time.  The quarter-turn ball valves are much better.

There are a few options to attach a fitting for rodi there. If you go to a good Lowe's the guy running the plumbing section should be able to get you something that works. There are brass compression fittings you can cut in there or use flex hoses if your sink bottom works with them or solder a T into it with a compression fitting on the side for the plastic 1/4".

The valve pictured above may be hard to find and would require you to redo the copper tubing since the connection would then be on the side and not on a 90 degree angle or the top of the valve once connected.
